Christmas Eve borscht with dumplings
Christmas Eve borscht with dumplings – specially prepared red borscht with lenten dumplings, which is a traditional Polish soup served on Christmas Eve. Christmas borscht differs from red borscht prepared during the year.
Mushroom soup
Mushroom soup – soup based on meat-vegetable or vegetable broth with the addition of mushrooms, also dried, in an amount that gives the dish a mushroom flavor. Mushroom soup can be prepared from mushrooms of various species or of the same species (mushroom soup, boletus soup, chanterelle soup). In Polish cuisine, it is usually served with noodles or pasta, often with cream.
Dumplings with cabbage and mushrooms
Dumplings with cabbage and mushrooms are a traditional Christmas Eve dish served in every region of Poland. They taste good with both red borscht and mushroom soup.
Croquettes
Croquette – a kind of patty, a fried pancake stuffed with a small roll. To make croquettes, you need to make stuffing (the simplest one can be made of finely chopped sauerkraut with the addition of fried, chopped and seasoned onion). After spreading the stuffing, the pancake is rolled up and placed in a kind of envelope dipped in an egg with flour and breadcrumbs, and then fried in a pan in oil.
Poppy seed cake
Poppy seed cake – cake layered with ground poppy seeds, sugar and dried fruit. Such baking usually takes the form of a cake or a tart, where a thick layer of poppy seed mass is placed on a thin layer of dough.
